What I'll be making from what's on sale at Safeway this week

Today I headed to Safeway. Earlier this week I posted the great deals to be found at Safeway this week. I wanted to take advantage of some of their amazing Thanksgiving deals. You can't beat $1.49 for milk or $ .88 for 10 lbs of potatoes. Plus, with their in-ad coupon and manufacturer coupons combined, I was able to pick up Jumbo packs of Pampers diapers for $5.99! Right now all .99 and under coupons are worth $1!

As the author of 101 Things to Do With a Potato, I was especially happy that all the ingredients for my favorite mashed potato recipe were on sale at Safeway! In addition to the milk and potatoes being on sale, they have their 8 ounce Lucerne Cream Cheese on sale for $ .99 when you buy 2.

Ranch Mashed Potatoes from 101 Things To Do With A Potato
5 lbs potatoes, peeled and cubed
2 teaspoons salt
1/3 cup half-and-half or milk
1 package (8 ounces) cream cheese, softened
1 envelope ranch dressing mix

Place Potatoes in bottom of a large soup pan. Cover potatoes with water and add salt. Bring to a boil. Reduce to medium- low heat. Cook 20-25 minutes, or until tender. Drain and add half-and-half to potatoes. Mash with a potato masher or mix with an electric mixer. Mix in cream cheese and ranch dressing mix until smooth. Serve immediately. Makes 10-12 servings.

* More half-and-half or milk may be added for creamier potatoes.

Those of you who live here in Tucson have probably been noticing the stiff grocery competition going on between our grocery stores. For us the consumers, it has been wonderful. Safeway is trying hard to be competitive. A few weeks ago they went through and slashed prices through out the entire store. Their everyday prices are a lot lower than they used to be. I noticed that their generic products are everyday priced at what I consider to be the good sale price. You'll have to go in and check it out for yourself.
